- 2 cups shredded carrots (about 2 large)
- 1/2 cup shredded apple (peeled)
- 1/2 cup crushed pineapple, drained
- 1/3 cup raisins
- 1/3 cup chopped walnuts or pecans
- 1/4 cup shredded coconut (optional)
- 3 large eggs
- 1/2 cup vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or grease.
- Mix Dry Ingredients: In a large bowl, combine flours, brown sugar, baking soda, cinnamon, and salt.
- Add Mix-Ins: Mix in carrots, apple, pineapple, raisins, nuts, and coconut.
- Combine Wet Ingredients: In a separate bowl, whisk eggs, oil, and vanilla. Pour into the dry mixture and stir until just combined.
- Bake: Divide batter into muffin cups and bake for 22–26 minutes until a toothpick comes out clean.
- Cool and Enjoy: Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
