  • 2 cups shredded carrots (about 2 large)
  • 1/2 cup shredded apple (peeled)
  • 1/2 cup crushed pineapple, drained
  • 1/3 cup raisins
  • 1/3 cup chopped walnuts or pecans
  • 1/4 cup shredded coconut (optional)
  • 3 large eggs
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or grease.
  2. Mix Dry Ingredients: In a large bowl, combine flours, brown sugar, baking soda, cinnamon, and salt.
  3. Add Mix-Ins: Mix in carrots, apple, pineapple, raisins, nuts, and coconut.
  4. Combine Wet Ingredients: In a separate bowl, whisk eggs, oil, and vanilla. Pour into the dry mixture and stir until just combined.
  5. Bake: Divide batter into muffin cups and bake for 22–26 minutes until a toothpick comes out clean.
