Jammie Dodger Crust:

  • 12 Jammie Dodgers (plus extra for garnish)
  • 1 cup digestive biscuit crumbs (or graham cracker crumbs)
  • 3 tablespoons unsalted butter, melted

Cheesecake Filling:

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream, cold
  • 1/4 cup raspberry or strawberry jam
  • Optional: whipped cream and mini Jammie Dodgers for topping

Instructions

  1. Prepare the Crust: Line a 12-cup muffin tin with paper cupcake liners. Place one Jammie Dodger cookie flat into the bottom of each liner. Mix digestive biscuit crumbs with melted butter, then spoon over each Jammie Dodger to form the crust.
