These Mini Cherry Cheesecake Bites are the perfect bite-sized dessert for any occasion. Creamy cheesecake filling on a graham cracker crust topped with sweet cherry pie filling – they’re irresistible!

Graham Cracker Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
Cheesecake Filling:
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 1 tablespoon all-purpose flour
Topping:
- 1 (21-ounce) can cherry pie filling
Instructions
- Preheat the oven: Preheat the oven to 325°F (163°C) and line a mini muffin tin with 24 mini cupcake liners.
- Prepare the crust: Mix graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press mixture into liners.
- Make the filling: Beat cream cheese, sugar, vanilla, eggs, sour cream, and flour until smooth. Spoon over crust.
- Bake: Bake for 15–18 minutes until set. Cool, then chill for at least 2 hours.
- Top and serve: Before serving, add cherry pie filling on top of each bite.

- You can use any pie filling like blueberry or strawberry.
