For the Bowls:
- 2 cups cooked quinoa or brown rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup tzatziki sauce (for serving)
Instructions
- Marinate the Steak: Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Marinate steak for at least 30 minutes.
- Grill the Steak: Grill marinated steak for 4–5 minutes per side. Let it rest and then slice thinly.
- Assemble the Bowls: Divide quinoa or rice among bowls. Top with steak slices, cherry tomatoes, cucumber, red onion, olives, feta, and parsley. Drizzle with tzatziki sauce.
