Description

These Mediterranean Steak Bowls are a delicious and nutritious meal option that combines tender grilled steak with flavorful Mediterranean-inspired ingredients. Perfect for a healthy and satisfying lunch or dinner.

Ingredients

Scale

For the Steak:

  • 1 lb flank steak or skirt steak
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowls:

  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup tzatziki sauce (for serving)

Instructions

  1. Marinate the Steak: Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Marinate steak for at least 30 minutes.
  2. Grill the Steak: Grill marinated steak for 4–5 minutes per side. Let it rest and then slice thinly.
  3. Assemble the Bowls: Divide quinoa or rice among bowls. Top with steak slices, cherry tomatoes, cucumber, red onion, olives, feta, and parsley. Drizzle with tzatziki sauce.

Notes

  • For a lighter option, use cauliflower rice instead of quinoa.
  • You can substitute steak with chicken or lamb.
