Ingredients
Shrimp:
1 pound shrimp (peeled, deveined, and tails removed), 1 tablespoon olive oil, 1/2 teaspoon chili powder, 1/4 teaspoon cumin, 1/4 teaspoon garlic powder, salt and pepper to taste, 8 small corn or flour tortillas
Mango Slaw:
1 1/2 cups shredded cabbage, 1 ripe mango (peeled and julienned or diced), 1/4 cup shredded carrots, 1/4 cup chopped cilantro, 1 tablespoon lime juice, 1 tablespoon honey, 1 tablespoon olive oil, salt to taste
Instructions
- Prepare the Shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Cook in a skillet over medium-high heat for 2–3 minutes per side, until pink and opaque. Set aside.
- Make the Mango Slaw: In a separate bowl, mix cabbage, mango, carrots, cilantro, lime juice, honey, olive oil, and salt. Toss to combine.
- Assemble the Tacos: Warm tortillas in a skillet or microwave. Fill each tortilla with mango slaw, top with cooked shrimp, and garnish with cilantro or lime crema.
