  • 1 yellow bell pepper (sliced)
  • 1 cup sugar snap peas
  • 1 ripe mango (peeled and cubed)
  • 2 green onions (sliced)

For the Sauce:

  • 1/4 cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic (minced)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Marinate the Chicken: Toss chicken pieces with cornstarch and soy sauce. Set aside.
  2. Prepare the Sauce: Whisk together all sauce ingredients except cornstarch slurry.
  3. Stir-Fry: Cook marinated chicken until nearly cooked through. Remove from pan. Stir-fry bell peppers and snap peas. Return chicken to pan, add sauce, and thicken with cornstarch slurry.
