- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 cup sugar snap peas
- 1 ripe mango (peeled and cubed)
- 2 green onions (sliced)
For the Sauce:
- 1/4 cup orange juice
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic (minced)
- 1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions
- Marinate the Chicken: Toss chicken pieces with cornstarch and soy sauce. Set aside.
- Prepare the Sauce: Whisk together all sauce ingredients except cornstarch slurry.
- Stir-Fry: Cook marinated chicken until nearly cooked through. Remove from pan. Stir-fry bell peppers and snap peas. Return chicken to pan, add sauce, and thicken with cornstarch slurry.
- Finish: Fold in mango cubes and warm through. Garnish with green onions and serve over rice or noodles.
