Potatoes:

  • 2 pounds russet potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ cup cooked and crumbled bacon
  • 2 green onions, sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare potatoes: In a large bowl, toss potatoes with olive oil, half of the ranch seasoning, smoked paprika, garlic powder, salt, and black pepper. Spread in the baking dish and bake for 25 minutes, stirring halfway through.
  3. Add chicken: Remove from oven and add chicken on top of the potatoes. Sprinkle with remaining ranch seasoning and half of the cheddar cheese. Bake for 20–25 minutes.
  4. Finish casserole: Top with remaining cheese, bacon, and green onions. Bake for 5 more minutes until cheese is melted. Garnish with parsley and serve hot.
