  • 3 cups cooked chicken breast, shredded or diced
  • 4 cups diced potatoes (russet or Yukon gold)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Prepare the Potatoes: Toss the diced potatoes with olive oil, salt, pepper, garlic powder, and onion powder. Spread in the baking dish and bake for 25–30 minutes.
  3. Prepare the Chicken Mixture: Mix the cooked chicken with sour cream, mayonnaise, half of the shredded cheese, and half of the green onions.
  4. Assemble the Casserole: Spread the chicken mixture over the cooked potatoes. Top with remaining cheese and bacon.
