  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Optional topping:

  • powdered sugar or whipped cream for serving

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang.
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8–10 minutes.
  3. Make the filling: Beat cream cheese and sugar, add eggs, sour cream, lemon juice, zest, and vanilla. Pour over crust.
  4. Bake: Bake for 30–35 minutes until set. Cool, then refrigerate for at least 4 hours.
  5. Serve: Lift bars out, cut into squares, and dust with powdered sugar or top with whipped cream.
