Crust:

  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt

Filling:

  • 1 tablespoon cornstarch
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 2 cups fresh blueberries (or thawed frozen blueberries)
  • 1 can (14 ounces) sweetened condensed milk

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix crust: In a large bowl, combine melted butter, granulated sugar, brown sugar, and vanilla. Add flour and salt, mix until a crumbly dough forms.
  3. Form crust: Press two-thirds of the dough into the pan to form the crust. Bake for 15 minutes until lightly golden.
  4. Prepare filling: In another bowl, whisk cornstarch, lemon zest, lemon juice, and sweetened condensed milk until smooth. Fold in blueberries.
  5. Assemble bars: Pour the lemon blueberry mixture over the warm crust. Crumble the remaining dough over the filling.
  6. Bake: Bake for 30–35 minutes until golden and set. Cool in the pan, then refrigerate for at least 2 hours before slicing.

Notes

  • For easier slicing, chill the bars overnight.
  • You can substitute lime for lemon if desired.
  • Frozen blueberries should be thawed and drained before use.
