Crust:
- 1 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
Filling:
- 1 tablespoon cornstarch
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- 2 cups fresh blueberries (or thawed frozen blueberries)
- 1 can (14 ounces) sweetened condensed milk
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Mix crust: In a large bowl, combine melted butter, granulated sugar, brown sugar, and vanilla. Add flour and salt, mix until a crumbly dough forms.
- Form crust: Press two-thirds of the dough into the pan to form the crust. Bake for 15 minutes until lightly golden.
- Prepare filling: In another bowl, whisk cornstarch, lemon zest, lemon juice, and sweetened condensed milk until smooth. Fold in blueberries.
- Assemble bars: Pour the lemon blueberry mixture over the warm crust. Crumble the remaining dough over the filling.
- Bake: Bake for 30–35 minutes until golden and set. Cool in the pan, then refrigerate for at least 2 hours before slicing.
Notes
- For easier slicing, chill the bars overnight.
- You can substitute lime for lemon if desired.
- Frozen blueberries should be thawed and drained before use.
