Ingredients

Udon Noodles:

12 ounces udon noodles (fresh or frozen),

Kimchi:

1 cup kimchi (chopped),

Vegetable Oil:

2 tablespoons,

Aromatics:

3 cloves garlic (minced), 1 tablespoon ginger (grated), 3 scallions (sliced, white and green parts separated),

Sauce:

2 tablespoons soy sauce, 1 tablespoon gochujang (Korean chili paste), 1 teaspoon sesame oil, 1 teaspoon sugar, 1 cup vegetable broth or water,

Garnish:

1 teaspoon toasted sesame seeds, optional: soft-boiled egg for topping


Instructions

  1. Cook Udon Noodles: Cook udon noodles according to package instructions. Drain and set aside.
  2. Sauté Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic, ginger, and the white parts of the scallions; sauté for 1-2 minutes until fragrant.
  3. Add Kimchi: Add chopped kimchi and cook for 3-4 minutes until heated through.
  4. Make Sauce: Stir in soy sauce, gochujang, sesame oil, and sugar. Add vegetable broth and bring to a simmer.
  5. Combine: Add cooked udon noodles and toss to combine, heating through for another 2 minutes.
  6. Finish and Serve: Remove from heat and stir in green scallion parts. Serve sprinkled with toasted sesame seeds and top with a soft-boiled egg if desired.

Notes
