Ingredients
Udon Noodles:
12 ounces udon noodles (fresh or frozen),

Sauce:
2 tablespoons soy sauce, 1 tablespoon gochujang (Korean chili paste), 1 teaspoon sesame oil, 1 teaspoon sugar, 1 cup vegetable broth or water,
Garnish:
1 teaspoon toasted sesame seeds, optional: soft-boiled egg for topping
Instructions
- Cook Udon Noodles: Cook udon noodles according to package instructions. Drain and set aside.
- Sauté Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic, ginger, and the white parts of the scallions; sauté for 1-2 minutes until fragrant.
- Add Kimchi: Add chopped kimchi and cook for 3-4 minutes until heated through.
- Make Sauce: Stir in soy sauce, gochujang, sesame oil, and sugar. Add vegetable broth and bring to a simmer.
- Combine: Add cooked udon noodles and toss to combine, heating through for another 2 minutes.
- Finish and Serve: Remove from heat and stir in green scallion parts. Serve sprinkled with toasted sesame seeds and top with a soft-boiled egg if desired.
Notes
- Adjust gochujang amount for desired spice level.
- For a heartier dish, add sautéed mushrooms, tofu, or sliced pork.
- This recipe is naturally vegan if you omit the egg.
