Description

A hearty and flavorful casserole dish inspired by John Wayne, featuring layers of seasoned ground beef, creamy cheeses, and a biscuit crust, baked to perfection.

For the Beef Layer:

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 (16-ounce) can diced tomatoes with green chilies, drained

For the Creamy Layer:

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 small onion, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 1 (8-count) can refrigerated biscuits

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook Beef: Brown ground beef in a skillet over medium heat, drain excess fat, add taco seasoning and water, simmer for 5 minutes, then stir in diced tomatoes.
  3. Mix Creamy Layer: In a bowl, combine sour cream, mayonnaise, half of cheddar and Monterey Jack cheeses, onion, garlic powder, salt, and pepper.
  4. Assemble: Press biscuits into the dish for crust, top with beef mixture, then spread sour cream mixture and remaining cheeses over it.
  5. Bake: Bake for 30–35 minutes until cheese is melted, bubbly, and biscuits are cooked. Rest for 5–10 minutes before serving.

Notes

  • You can use Greek yogurt instead of sour cream and add jalapeños or bell peppers for extra flavor.
  • This casserole reheats well for leftovers.
