For the Beef Layer:
- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 (16-ounce) can diced tomatoes with green chilies, drained
For the Creamy Layer:
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded Monterey Jack cheese, divided
- 1 small onion, chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Additional:
- 1 (8-count) can refrigerated biscuits
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook Beef: Brown ground beef in a skillet over medium heat, drain excess fat, add taco seasoning and water, simmer for 5 minutes, then stir in diced tomatoes.
- Mix Creamy Layer: In a bowl, combine sour cream, mayonnaise, half of cheddar and Monterey Jack cheeses, onion, garlic powder, salt, and pepper.
- Assemble: Press biscuits into the dish for crust, top with beef mixture, then spread sour cream mixture and remaining cheeses over it.
- Bake: Bake for 30–35 minutes until cheese is melted, bubbly, and biscuits are cooked. Rest for 5–10 minutes before serving.
Notes
- You can use Greek yogurt instead of sour cream and add jalapeños or bell peppers for extra flavor.
- This casserole reheats well for leftovers.
