  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1/2 cup melted butter
  • 1 cup coconut milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease/flour an 8×8-inch baking pan.
  2. Mix dry ingredients: In a large bowl, combine flour, grated coconut, sugars, baking powder, cinnamon, nutmeg, and salt.
  3. Combine wet ingredients: In a separate bowl, beat eggs and mix in melted butter, coconut milk, vanilla extract, and almond extract.
  4. Combine mixtures: Gradually add wet ingredients to dry ingredients and stir until well combined.
  5. Bake: Pour batter into the pan, spread evenly, and bake for 45–50 minutes until a toothpick comes out clean.
  6. Cool and serve: Let the cake cool in the pan before slicing and serving.

Notes

  • For added texture, stir in 1/4 cup of raisins or chopped dried fruit.
  • Freshly grated coconut gives the best flavor, but desiccated works well too.
