Ingredients
Scale
Vegetables and Aromatics
- 1 pound fresh green beans (trimmed)
- 1/2 small onion (thinly sliced)
- 2 cloves garlic (minced)
- 1/4 cup diced tomatoes (canned or fresh)
Seasonings and Oils
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
Finishing Touches
- 2 tablespoons grated Parmesan cheese
- Optional: fresh parsley for garnish
Instructions
- Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 4–5 minutes until crisp-tender. Drain and rinse under cold water to stop the cooking process. Set aside.
- Sauté Onions: In a large skillet, heat olive oil over medium heat. Add the sliced onion and cook for 3–4 minutes until softened and translucent.
- Add Garlic and Spices: Stir in the minced garlic, Italian seasoning, and crushed red pepper flakes if using. Cook for about 30 seconds until fragrant, taking care not to burn the garlic.
- Simmer Tomatoes: Add the diced tomatoes to the skillet and simmer for 2 minutes to blend the flavors and slightly soften the tomatoes.
- Combine and Heat Through: Add the cooked green beans to the skillet. Toss them gently in the tomato mixture and cook for an additional 3–4 minutes until heated through and well-coated.
- Season and Finish: Season with salt and black pepper to taste. Sprinkle grated Parmesan cheese over the top and garnish with fresh parsley if desired. Serve warm.
Notes
- You can use frozen green beans—just thaw and pat dry before cooking.
- For a heartier version, add crispy pancetta or cooked crumbled sausage.
- This dish pairs well with grilled meats or roasted chicken.
