Chicken and Vegetables:
- 4 boneless, skinless chicken thighs
- 1 pound baby gold potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
Seasoning and Garnish:
- 3 tablespoons olive oil
- 1 packet (1 ounce) Italian dressing seasoning mix
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
- ¼ cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Prepare Ingredients: Place chicken thighs in the slow cooker. Add potatoes, bell peppers, and onion on top.
- Mix Seasoning: In a bowl, combine olive oil, Italian seasoning mix, garlic powder, oregano, basil, salt, pepper, and red pepper flakes. Pour over the chicken and vegetables. Toss to coat.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and potatoes are cooked.
- Finish: Sprinkle Parmesan over the dish before serving. Garnish with parsley if desired.
Notes
- Substitute chicken breast for thighs if preferred.
- Add zucchini or cherry tomatoes for extra veggies.
- For a crispy texture, broil the dish briefly after slow cooking.
