Potatoes:

  • pounds baby Yukon gold potatoes

Honey Butter Mixture:

  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Fresh thyme or chopped parsley, for garnish (optional)

Instructions

  1. Preheat oven and prepare potatoes: Preheat oven to 425°F (220°C). Boil the potatoes until fork-tender, then drain and let them steam dry briefly.
  2. Smash the potatoes: Flatten each potato slightly using the bottom of a glass on a baking sheet lined with parchment paper.
  3. Prepare honey butter mixture: Combine melted butter, honey, olive oil, garlic powder, salt, and pepper. Drizzle over smashed potatoes.
  4. Roast the potatoes: Roast for 25–30 minutes until golden and crispy. Garnish with thyme or parsley before serving.
