Potatoes:
- 1½ pounds baby Yukon gold potatoes
Honey Butter Mixture:
- 2 tablespoons unsalted butter, melted
- 1 tablespoon honey
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- Fresh thyme or chopped parsley, for garnish (optional)
Instructions
- Preheat oven and prepare potatoes: Preheat oven to 425°F (220°C). Boil the potatoes until fork-tender, then drain and let them steam dry briefly.
- Smash the potatoes: Flatten each potato slightly using the bottom of a glass on a baking sheet lined with parchment paper.
- Prepare honey butter mixture: Combine melted butter, honey, olive oil, garlic powder, salt, and pepper. Drizzle over smashed potatoes.
- Roast the potatoes: Roast for 25–30 minutes until golden and crispy. Garnish with thyme or parsley before serving.
Notes
- For extra crispiness, allow the smashed potatoes to sit before roasting to release more moisture.
- For deeper browning, broil the potatoes for the last 2 minutes.
