Pecan Clusters:

  • 1 cup pecan halves (about 60 pieces)

Caramel Filling:

  • 20 soft caramel candies (unwrapped)
  • 1 tbsp heavy cream

Chocolate Coating:

  • 1 1/2 cups semisweet or milk chocolate chips
  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. Prepare Pecan Clusters: Line a baking sheet with parchment paper. Arrange pecans in clusters of 3, forming a ‘Y’ shape to mimic turtle legs and head.
  2. Melt Caramel: In a microwave-safe bowl, combine caramels and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth and melted (about 1–2 minutes total).
  3. Assemble Turtles: Spoon about 1 teaspoon of the melted caramel onto the center of each pecan cluster, allowing it to drizzle over the nuts to hold them together. Let cool for about 10–15 minutes until set.
  4. Coat with Chocolate: Melt chocolate chips and coconut oil (if using) in the microwave in 30-second intervals, stirring until smooth. Spoon or drizzle about 1 tablespoon of melted chocolate over each caramel cluster to cover.
  5. Chill and Serve: Chill in the refrigerator for 20–30 minutes or until firm. Store in an airtight container at room temperature or in the fridge.

Notes
