For the Chicken Meatballs:

- 1/4 cup breadcrumbs

- 2 cups cooked brown rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced

- 1/2 cup tzatziki sauce
- Lemon wedges, for serving
Instructions
- Prepare the Chicken Meatballs: In a large bowl, mix together the ground chicken, breadcrumbs, egg, garlic, parsley, dill, basil, salt, and pepper until just combined. Form into 1 1/2-inch meatballs.
- Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 6–8 minutes, turning occasionally, until golden brown and cooked through.
- Assemble the Bowls: Divide the cooked rice or quinoa among four bowls. Top each with chicken meatballs, cherry tomatoes, cucumber, and red onion. Spoon tzatziki sauce over the top and serve with lemon wedges.

- You can bake the meatballs at 400°F for 15–18 minutes instead of pan-frying.
- Use store-bought or homemade tzatziki.
