Beef Stew:

  • 1 1/2 pounds beef stew meat (cut into 1-inch cubes)
  • 2 tablespoons olive oil

Vegetables:

  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 3 carrots (sliced)
  • 2 celery stalks (sliced)
  • 2 potatoes (peeled and cubed)
  • 1 parsnip (chopped)
  • 1 cup green beans (trimmed and halved)

Other Ingredients:

  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef and brown on all sides, about 5–7 minutes. Remove beef and set aside.
  2. Cook the Vegetables: In the same pot, add onion and cook until translucent, about 4 minutes. Add garlic and cook for 1 minute. Stir in the carrots, celery, potatoes, parsnip, and green beans. Cook for another 5 minutes, stirring occasionally.
  3. Simmer the Stew: Return the beef to the pot and stir in the diced tomatoes, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 1 1/2 to 2 hours, or until the beef is tender and the vegetables are cooked through. Discard bay leaf before serving. Garnish with fresh parsley.
