Ingredients

Scale

Dry Ingredients:

  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 medium apple, diced
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease an 8×8-inch baking dish or line it with parchment paper.
  2. Mix the ingredients: In a large bowl, combine the rolled oats, applesauce, eggs, honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, baking powder, and salt.
  3. Add the apple and nuts: Fold in the diced apple and nuts if using.
