Chicken:

  • 3 pounds bone-in chicken thighs, skin removed if desired

Shoyu Sauce:

  • 1 cup shoyu soy sauce
  • 1 cup water
  • 1/2 cup brown sugar, packed
  • 1/4 cup mirin or rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper

Garnish:

  • 2 green onions, sliced
  • Sesame seeds, optional

Instructions

  1. In a large pot, combine shoyu, water, brown sugar, mirin, garlic, ginger, sesame oil, and black pepper. Stir until sugar is dissolved.
  2. Add chicken thighs to the pot, ensuring they are submerged in the sauce. Bring to a boil, then reduce heat to low and cover. Simmer for 45 minutes, turning chicken halfway through.
  3. Remove the lid and simmer for another 10 minutes to thicken the sauce slightly.
  4. Serve chicken over steamed rice, garnished with green onions and sesame seeds.

  • For enhanced flavor, marinate the chicken in the sauce for 1 hour before cooking.
