Chicken:
- 3 pounds bone-in chicken thighs, skin removed if desired
Shoyu Sauce:
- 1 cup shoyu soy sauce
- 1 cup water
- 1/2 cup brown sugar, packed
- 1/4 cup mirin or rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
Garnish:
- 2 green onions, sliced
- Sesame seeds, optional
Instructions
- In a large pot, combine shoyu, water, brown sugar, mirin, garlic, ginger, sesame oil, and black pepper. Stir until sugar is dissolved.
- Add chicken thighs to the pot, ensuring they are submerged in the sauce. Bring to a boil, then reduce heat to low and cover. Simmer for 45 minutes, turning chicken halfway through.
- Remove the lid and simmer for another 10 minutes to thicken the sauce slightly.
- Serve chicken over steamed rice, garnished with green onions and sesame seeds.
Notes
- For enhanced flavor, marinate the chicken in the sauce for 1 hour before cooking.
