Ground Turkey Skillet:
- 1 tablespoon olive oil
- 1 lb ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 medium zucchini, diced
Additional Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, with juices
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley or cilantro (for garnish)
Instructions
- Heat olive oil: In a large skillet over medium heat.
- Cook turkey: Add ground turkey and cook for 5–7 minutes, breaking it up until browned.
- Add onion and garlic: Cook for 3 minutes, then add garlic and cook for 1 more minute.
- Cook zucchini: Add zucchini and cook for 3–4 minutes until tender.
- Incorporate remaining ingredients: Stir in chickpeas, diced tomatoes, spices, salt, and pepper. Simmer for 5–7 minutes.
- Adjust seasoning: Taste and adjust as needed. Remove from heat and garnish with parsley or cilantro.
Notes
- Serve over rice, quinoa, or with warm pita.
- Add spinach or kale for extra greens.
