Ground Turkey Skillet:

  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced

Additional Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley or cilantro (for garnish)

Instructions

  1. Heat olive oil: In a large skillet over medium heat.
  2. Cook turkey: Add ground turkey and cook for 5–7 minutes, breaking it up until browned.
  3. Add onion and garlic: Cook for 3 minutes, then add garlic and cook for 1 more minute.
  4. Cook zucchini: Add zucchini and cook for 3–4 minutes until tender.
  5. Incorporate remaining ingredients: Stir in chickpeas, diced tomatoes, spices, salt, and pepper. Simmer for 5–7 minutes.
  6. Adjust seasoning: Taste and adjust as needed. Remove from heat and garnish with parsley or cilantro.
