  • 2 large eggs
  • 1 tsp vanilla extract

For the apple topping:

  • 2 medium apples, peeled and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg

Optional drizzle:

  • 1/4 cup caramel sauce

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Prepare the crust: Mix gluten-free graham cracker crumbs, melted butter, and granulated sugar. Press into the pan to form the crust.
  3. Make the cheesecake layer: Beat cream cheese, granulated sugar, eggs, and vanilla until smooth. Pour over the crust.
  4. Prepare the apple topping: Cook apples with butter, brown sugar, cinnamon, and nutmeg until softened. Spoon over the cheesecake layer.
  5. Bake: Bake for 30–35 minutes until set. Cool, then refrigerate for at least 3 hours before slicing into bars.
  6. Optional: Drizzle with caramel sauce before serving.
