For the Gnocchi Dish:

  • 1 pound potato gnocchi
  • 3 tablespoons olive oil, divided
  • 4 garlic cloves, minced
  • 1 small onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the Chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper, then cook for 5–6 minutes until golden and cooked through. Remove chicken and set aside.
  2. Prepare the Gnocchi Dish: In the same skillet, add the remaining olive oil and sauté the onion for 2 minutes until softened. Add garlic and cook for 1 minute until fragrant. Stir in cherry tomatoes and cook until they begin to soften. Add gnocchi, heavy cream, chicken broth, Italian seasoning, and red pepper flakes if using. Bring to a gentle simmer and cook for 5–6 minutes until gnocchi are tender and sauce thickens.
  3. Finish the Dish: Stir in spinach and Parmesan cheese until spinach wilts and sauce becomes creamy. Return chicken to the skillet and toss to coat. Garnish with fresh basil or parsley and serve hot.
