For Smashed Potatoes:
- 1 1/2 pounds baby gold potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Steak Bites:
- 1 1/4 pounds sirloin steak, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme (or 1/2 tsp dried)
- 1 teaspoon fresh rosemary (or 1/2 tsp dried)
- Chopped parsley, optional, for garnish
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Prepare Potatoes: Boil baby potatoes until fork-tender. Smash each potato, drizzle with olive oil, salt, and pepper. Roast until crispy.
- Cook Steak: Season steak cubes and sear in a hot skillet. Set aside.
- Make Garlic Butter Sauce: In the same skillet, melt butter, add garlic, thyme, and rosemary. Toss steak in the garlic butter.
- Serve: Serve steak bites over crispy smashed potatoes, garnish with parsley.
