For Steak Bites:

  • 1 1/4 pounds sirloin steak, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme (or 1/2 tsp dried)
  • 1 teaspoon fresh rosemary (or 1/2 tsp dried)
  • Chopped parsley, optional, for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Prepare Potatoes: Boil baby potatoes until fork-tender. Smash each potato, drizzle with olive oil, salt, and pepper. Roast until crispy.
  3. Cook Steak: Season steak cubes and sear in a hot skillet. Set aside.
  4. Make Garlic Butter Sauce: In the same skillet, melt butter, add garlic, thyme, and rosemary. Toss steak in the garlic butter.
  5. Serve: Serve steak bites over crispy smashed potatoes, garnish with parsley.
