- 2 tablespoons olive oil
For the Potatoes:
- 1 1/2 pounds baby potatoes, halved
- 4 tablespoons unsalted butter, divided
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
- Chopped parsley for garnish
Instructions
- Prepare the Steak: Bring steak cubes to room temperature and pat dry. Season with salt and pepper.
- Cook the Potatoes: In a skillet, cook halved potatoes cut side down until golden and tender. Remove and set aside.
- Sear the Steak: Sear steak bites in olive oil until browned. Remove from skillet.
- Make the Garlic Butter: Lower heat, add butter and garlic. Stir in thyme and rosemary.
- Finish the Dish: Return steak and potatoes to the skillet, toss to coat in garlic butter, and heat through. Garnish with parsley.
