- 1 can (15 oz) black beans (drained and rinsed)
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/4 cup melted coconut oil
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup mini chocolate chips (plus extra for topping, optional)
Instructions
- Preheat the oven and prepare the tin: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
- Blend the ingredients: In a food processor or blender, combine black beans, eggs, maple syrup, coconut oil, cocoa powder, vanilla extract, baking powder, and salt. Blend until smooth and thick.
- Add chocolate chips and bake: Fold in the mini chocolate chips. Spoon the batter into the muffin tin, top with extra chocolate chips if desired, and bake for 12–15 minutes.
- Cool and serve: Let the brownie bites cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
