Sauce:

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon all-purpose flour
  • 1 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 1 cup baby carrots, halved lengthwise
  • 1 cup small yellow potatoes, halved
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare Chicken: Preheat oven to 375°F. Season chicken with salt and pepper. Sear in olive oil until golden brown. Set aside.
  2. Make Sauce: Sauté onion, garlic, thyme, and mustard. Add flour, wine, and broth. Simmer with carrots and potatoes.
  3. Bake: Return chicken to pot, bake covered for 45–50 minutes. Stir in cream and parsley before serving.
