Chicken:
- 2 pounds bone-in, skin-on chicken thighs
- Salt and black pepper to taste
- 1 tablespoon olive oil
Sauce:
- 2 tablespoons unsalted butter
- 1 medium yellow onion, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 tablespoon Dijon mustard
- 1 tablespoon all-purpose flour
- 1 cup dry white wine
- 1 cup low-sodium chicken broth
- 1 cup baby carrots, halved lengthwise
- 1 cup small yellow potatoes, halved
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Prepare Chicken: Preheat oven to 375°F. Season chicken with salt and pepper. Sear in olive oil until golden brown. Set aside.
- Make Sauce: Sauté onion, garlic, thyme, and mustard. Add flour, wine, and broth. Simmer with carrots and potatoes.
- Bake: Return chicken to pot, bake covered for 45–50 minutes. Stir in cream and parsley before serving.
