Chicken:
- 4 bone-in, skin-on chicken thighs
Glaze:
- 2 tablespoons unsalted butter (softened)
- 3 cloves garlic (minced)
- 1 tablespoon fresh rosemary (finely chopped)

- ½ teaspoon black pepper
- ¼ cup balsamic vinegar
- ½ cup fig preserves
Instructions
- Preheat and Prepare: Preheat the oven to 425°F (218°C). Mix softened butter, half of the minced garlic, half of the rosemary, half of the salt, and half of the pepper. Rub this under and over the chicken skin.
- Sear the Chicken: Sear chicken skin-side down in a skillet for 5 minutes until golden brown. Flip and sear for another 2 minutes.
- Make the Glaze: Whisk balsamic vinegar, fig preserves, and remaining garlic, rosemary, salt, and pepper in a bowl.
- Roast: Brush most of the glaze over the chicken, then roast in the oven for 25 minutes, basting every 10 minutes until cooked through.
- Optional Finish: Broil for 2–3 minutes for a caramelized finish. Rest before serving.
