Chicken:

  • 4 bone-in, skin-on chicken thighs

Glaze:

  • 2 tablespoons unsalted butter (softened)
  • 3 cloves garlic (minced)

  • ½ teaspoon black pepper
  • ¼ cup balsamic vinegar
  • ½ cup fig preserves

Instructions

  2. Sear the Chicken: Sear chicken skin-side down in a skillet for 5 minutes until golden brown. Flip and sear for another 2 minutes.
  3. Make the Glaze: Whisk balsamic vinegar, fig preserves, and remaining garlic, rosemary, salt, and pepper in a bowl.
  4. Roast: Brush most of the glaze over the chicken, then roast in the oven for 25 minutes, basting every 10 minutes until cooked through.
  5. Optional Finish: Broil for 2–3 minutes for a caramelized finish. Rest before serving.
