Ingredients
English Muffins:
4 English muffins, split in half;
Scrambled Eggs:
6 large eggs; 2 tbsp milk; 1 tbsp butter; salt and black pepper to taste;
Toppings:
1/2 cup cooked breakfast sausage or crumbled bacon; 1/2 cup shredded cheddar cheese; 1/4 cup diced bell pepper or tomato (optional);
Garnish:
chopped green onions or parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and place English muffin halves on a baking sheet.
- Prepare Egg Mixture: In a bowl, whisk together eggs, milk, salt, and pepper.
- Scramble Eggs: Melt butter in a nonstick skillet over medium heat. Add egg mixture and scramble gently until just set but still soft. Remove from heat.
- Assemble Pizzas: Spoon scrambled eggs evenly over each English muffin half. Top with sausage or bacon, then sprinkle with cheese and optional veggies.
- Bake: Bake for 8–10 minutes or until cheese is melted and muffins are lightly toasted.
- Garnish and Serve: Garnish with green onions or parsley if desired and serve warm.
