Description

  • 1 box graham crackers
  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 2 1/2 cups cold milk
  • 1 (8 oz) container whipped topping (thawed)

For the ganache:

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon butter

Instructions

  1. Prepare the pudding mixture: In a large bowl, whisk together the vanilla pudding mix and cold milk until smooth and thickened. Fold in the whipped topping until fully combined.
  2. Layer the cake: In a 9×13-inch baking dish, layer graham crackers across the bottom. Spread half of the pudding mixture over the crackers. Add another layer of graham crackers, then spread the remaining pudding mixture on top. Finish with a final layer of graham crackers.
  3. Make the ganache: Heat the heavy cream in a small saucepan over medium heat until simmering. Remove from heat and pour over the chocolate chips in a heatproof bowl. Add the butter and whisk until smooth.
  4. Assemble the cake: Pour the ganache over the top layer of graham crackers and spread evenly. Cover and refrigerate the cake for at least 6 hours, or overnight, to allow the layers to soften and set. Slice and serve chilled.
