Pasta Salad:

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup black olives (sliced)
  • 1/2 cup mozzarella pearls or cubed mozzarella
  • 1/4 cup red onion (thinly sliced)
  • 1/2 cup salami or pepperoni (chopped, optional)
  • 3/4 cup Italian dressing
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Combine Ingredients: In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, black olives, mozzarella, red onion, and salami or pepperoni if using.
