Instructions

  1. Preheat and Prepare: Preheat oven to 375°F (190°C) and prepare muffin tin with liners or grease.
  2. Mix Dry Ingredients: In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Whisk Wet Ingredients: In another bowl, whisk egg, sour cream, oil, and vanilla until smooth.
  4. Combine: Add wet ingredients to dry, stir until just combined. Fold in chopped apples.
  5. Bake: Divide batter into muffin cups, bake for 18-22 minutes until a toothpick comes out clean. Cool before serving.
