- 1 cup dulce de leche
- Optional powdered sugar for dusting
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Roll out the dough: Roll the dough out on a lightly floured surface to about ¼-inch thickness. Use a small round or fluted cookie cutter to cut out cookies and place them on the prepared baking sheet.
- Bake: Bake for 10 to 12 minutes or until the edges are just turning golden. Allow cookies to cool completely.
- Assemble the sandwiches: Once cooled, spread about a teaspoon of dulce de leche on the bottom side of one cookie and sandwich with another cookie. Repeat with remaining cookies. Dust with powdered sugar if desired.
