Description

This Dill Pickle Grilled Cheese sandwich combines the tangy crunch of dill pickles with melted sharp cheddar and provolone cheeses for a deliciously unique twist on a classic grilled cheese. Toasted sourdough or rye bread is buttery and crispy, creating the perfect vessel for this flavorful, cheesy lunch treat. Optional touches of fresh dill and Dijon mustard add extra depth and brightness.

Ingredients

Scale

Bread & Butter

  • 4 slices sourdough or rye bread
  • 2 tablespoons unsalted butter, softened

Cheese & Pickles

  • 4 slices sharp cheddar cheese
  • 4 slices provolone cheese
  • 1/2 cup dill pickles, sliced thinly and patted dry

Optional Additions

  • 1 tablespoon fresh dill
  • 1 teaspoon Dijon mustard

Instructions

  1. Prepare the Bread: Spread butter evenly on one side of each bread slice to ensure a golden, crispy exterior when grilled.
  2. Layer the Sandwich: On the unbuttered side of two bread slices, layer one slice of sharp cheddar cheese, followed by the thinly sliced dill pickles, a sprinkle of fresh dill if using, and then one slice of provolone cheese.
  3. Add Mustard and Complete the Sandwich: Optionally spread a thin layer of Dijon mustard on the unbuttered side of the remaining two bread slices, then place these slices on top of the assembled layers, buttered side facing out.
  4. Cook the Sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese is melted.
  5. Serve: Remove the sandwiches from the pan, let cool for a minute to set, then slice and serve warm for the best flavor and melting experience.

Notes

  • Patting the dill pickles dry with a paper towel prevents the sandwich from becoming soggy.
  • Try swapping in Swiss, mozzarella, or Havarti cheese for a different flavor twist.
  • Add a dash of garlic powder to the butter for an extra savory note.
