For the Soup:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 cup dried red or yellow lentils, rinsed
  • 5 cups vegetable broth
  • 2 cups chopped kale or spinach
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley or cilantro

Instructions

  1. Heat olive oil: In a large pot over medium heat, add the onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
  2. Add spices: Stir in salt, pepper, turmeric, cumin, and coriander. Cook for 1 minute until fragrant.
  3. Cook lentils: Add the lentils and vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes until lentils are tender.
  4. Add greens: Stir in kale or spinach and cook for 2–3 minutes until wilted.
  5. Finish soup: Add lemon juice, parsley or cilantro, and adjust seasoning if needed. Serve hot.

Notes

  • For extra creaminess, blend half of the soup with an immersion blender before adding the greens.
  • This soup is naturally anti-inflammatory thanks to turmeric and packed with plant-based protein from the lentils.
