  • 3 cloves garlic, minced
  • 1 1/2 pounds mixed mushrooms (cremini, shiitake, button), sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 tablespoon soy sauce or tamari

For garnish:

  • Chopped fresh parsley

Instructions

  1. In a large soup pot, sauté aromatics: Heat butter and olive oil, sauté onion until translucent, add garlic.
  2. Cook mushrooms: Add mushrooms, thyme, salt, and pepper, cook until browned.
  3. Add flour and broth: Sprinkle in flour, pour in broth gradually, stir well.
  4. Simmer: Bring to boil, then simmer for 10 minutes.
  5. Finish the soup: Stir in cream, milk, and soy sauce, simmer for 5 more minutes.
  6. Adjust and serve: Adjust seasoning, serve hot garnished with parsley.

  • For a smoother texture, blend part or all of the soup before adding cream.
