Truffles:

- 1 tablespoon unsalted butter
- 1 teaspoon instant espresso powder
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Coating:
- 1/4 cup unsweetened cocoa powder
Instructions
- Prepare Chocolate Mixture: Place chopped dark chocolate in a bowl. Heat cream, butter, espresso powder, vanilla, and salt in a saucepan until hot. Pour over chocolate, let sit, then stir until smooth.
- Chill Mixture: Refrigerate chocolate mixture until firm enough to scoop, about 2-3 hours.
- Shape Truffles: Scoop portions and roll into balls. Coat each truffle in cocoa powder.
- Chill and Serve: Refrigerate truffles for 30 minutes before serving.
