Chicken:
- 4 boneless skinless chicken breasts
Sauce:
- 1 can (20 ounces) pineapple chunks with juice
- 1/2 cup low-sodium soy sauce
- 1/3 cup brown sugar packed
- 2 tablespoons rice vinegar
- 2 cloves garlic minced
- 1 teaspoon grated fresh ginger
Slurry:
- 1 tablespoon cornstarch
- 2 tablespoons water
Additional:
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds (optional)
- 2 green onions sliced (optional for garnish)
Instructions
- Place the chicken in the crockpot: Lay the chicken breasts at the bottom of the crockpot.
- Prepare the sauce: In a medium bowl, combine pineapple chunks with juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, and black pepper. Pour over the chicken.
- Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender.
- Shred the chicken: Remove the chicken, shred or slice as desired.
- Thicken the sauce: Create a slurry with cornstarch and water. Stir into the crockpot sauce and cook on high for 10-15 minutes until thickened.
- Combine and garnish: Return the chicken to the sauce, stir to coat, and garnish with sesame seeds and green onions.

- Chicken thighs can be used as a substitute for a juicier dish.
