Chicken:

  • 4 boneless skinless chicken breasts

Sauce:

  • 1 can (20 ounces) pineapple chunks with juice
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup brown sugar packed
  • 2 tablespoons rice vinegar
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger

Slurry:

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Additional:

  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions sliced (optional for garnish)

Instructions

  1. Place the chicken in the crockpot: Lay the chicken breasts at the bottom of the crockpot.
  2. Prepare the sauce: In a medium bowl, combine pineapple chunks with juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, and black pepper. Pour over the chicken.
  3. Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender.
  4. Shred the chicken: Remove the chicken, shred or slice as desired.
  5. Thicken the sauce: Create a slurry with cornstarch and water. Stir into the crockpot sauce and cook on high for 10-15 minutes until thickened.
  6. Combine and garnish: Return the chicken to the sauce, stir to coat, and garnish with sesame seeds and green onions.
