These Creamy Vanilla Cold Brew Coffee Popsicles are a delightful frozen treat that combines the rich flavors of cold brew coffee with a hint of vanilla. Creamy, smooth, and perfect for coffee lovers!
Ingredients
Cold Brew Coffee Mixture:
- 1 1/2 cups cold brew coffee concentrate
- 1/2 cup water
- 1 1/2 teaspoons pure vanilla extract
Cream Layer:
- 6 tablespoons heavy cream
- 2 tablespoons sweetened condensed milk
Instructions
- Cold Brew Coffee Mixture: In a pitcher, stir together cold brew concentrate, water, and vanilla extract until combined.
- Cream Layer: In a small bowl, whisk together heavy cream and sweetened condensed milk until smooth.
- To serve, run molds under warm water for a few seconds to release the popsicles.
Pour the mixture evenly into popsicle molds, filling each mold about two-thirds full. Freeze for 1 hour or until partially set.
Carefully pour the cream mixture over the partially frozen coffee layer in each mold. Insert popsicle sticks and return to the freezer for at least 4 hours, or until completely frozen.
Notes
- For a sweeter treat, add extra sweetened condensed milk to the coffee layer.
- You can swap heavy cream with coconut cream for a dairy-free version.
- Popsicles keep well in the freezer for up to 2 weeks.
