Sauce:

  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 2 cups baby spinach (chopped)

  • 8 oz pasta (penne or fettuccine)
  • 1/2 cup reserved pasta water
  • Chopped fresh basil for garnish (optional)

Instructions

  1. Cook Pasta: Cook pasta in salted water until al dente. Reserve pasta water, drain, and set aside.
  2. Cook Chicken: Season and cook chicken until browned and cooked through. Set aside.
  3. Make Sauce: Sauté garlic and sun-dried tomatoes, add spinach, cream, and Parmesan. Stir until smooth.
  4. Combine: Add cooked pasta and chicken to the sauce. Simmer to heat through.
  5. Serve: Garnish with basil and enjoy!
