Instructions
- Prepare the Sauce: In a large skillet over medium-high heat, melt 2 tablespoons butter with olive oil. Add cherry tomatoes, season with salt and red pepper flakes, and cook until tomatoes burst, about 10 minutes.
- Cook the Pasta: Meanwhile, cook pasta until 1 minute shy of al dente; reserve 1 cup pasta water.
- Finish the Sauce: Stir in garlic and cook for 1 minute. Deglaze with brandy or wine, scraping up any browned bits, and cook for 1–2 minutes. Add heavy cream, reduce heat to medium, and simmer for 5 minutes until sauce thickens slightly.
- Combine and Serve: Add pasta to the sauce with remaining butter, tossing to coat, and add reserved pasta water as needed for a silky texture. Stir in lobster meat just until warmed through. Adjust seasoning with salt. Serve immediately topped with parsley or basil.
