Ingredients
Scale
Main Ingredients
- 2 cups cooked chicken (shredded)
- 1 (20-ounce) package refrigerated cheese tortellini
- 1 tablespoon olive oil
- 3 cloves garlic (minced)
- 1 (10-ounce) package frozen chopped spinach (thawed and drained)
- 1 (8-ounce) block cream cheese (softened)
- 1 cup sour cream
- ½ cup chicken broth
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Seasonings
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes (optional)
- Nonstick cooking spray
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Cook Tortellini: Boil the refrigerated cheese tortellini according to package directions until al dente. Drain well and set aside to cool slightly.
- Sauté Garlic and Spinach: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the thawed and drained spinach and cook for 2–3 minutes, stirring often to evaporate excess moisture.
- Create Creamy Sauce: Reduce heat to low, then stir in softened cream cheese, sour cream, chicken broth, Italian seasoning, salt, black pepper, and crushed red pepper flakes (if using). Stir continuously until the cream cheese melts and the sauce becomes smooth and creamy.
- Combine Chicken and Tortellini: Add shredded cooked chicken and cooked tortellini to the sauce in the skillet. Stir gently to coat everything evenly with the creamy spinach mixture.
- Assemble Casserole: Pour the combined mixture into the prepared baking dish and spread it evenly. Sprinkle shredded mozzarella cheese and grated Parmesan cheese uniformly over the top of the casserole.
- Bake: Bake uncovered for 20–25 minutes in the preheated oven until the casserole is bubbly and the cheese on top is golden brown.
- Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes to set before serving. This enhances flavors and makes serving easier.
Notes
- You can substitute fresh spinach for frozen; just sauté it until wilted before proceeding.
- Rotisserie chicken is a convenient alternative to cooked shredded chicken.
- For extra flavor and texture, add sautéed mushrooms or sun-dried tomatoes to the mixture.
