Description

Indulge in a delightful combination of tender chicken, cheese-filled tortellini, and a creamy Parmesan sauce in this easy one-pan dinner recipe. With a touch of garlic and spinach, this dish is sure to become a family favorite!

Ingredients

Scale

For the Chicken:

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced

For the Sauce:

  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning

Additional:

  • 1 package (20 ounces) refrigerated cheese tortellini
  • 2 cups baby spinach
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season diced chicken with salt and pepper, then add to the skillet. Cook for 5–7 minutes until browned and cooked through. Add minced garlic and cook for 1 minute until fragrant.
  2. Make the Sauce: Reduce heat to medium and stir in heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Bring to a gentle simmer and cook for 2–3 minutes, stirring frequently.
  3. Add Tortellini and Spinach: Add the tortellini directly to the skillet and stir to coat. Cover and simmer for 5–7 minutes, or until the tortellini is tender and cooked through. Stir in the spinach and cook for another 1–2 minutes until wilted.
  4. Finish and Serve: Taste and adjust seasoning as needed. Garnish with fresh parsley and serve warm.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • You can also add sun-dried tomatoes or mushrooms for extra flavor.
