Creamy Garlic Sauce:

  • 3 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk or half-and-half
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon dried thyme
  • ¼ teaspoon onion powder
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Roast Potatoes: Toss the potatoes with olive oil, salt, and pepper. Roast for 25–30 minutes until golden and fork-tender.
  3. Make Garlic Sauce: Melt butter, sauté garlic, add flour, whisk in milk, add Parmesan, thyme, onion powder, salt, and pepper. Cook until thickened.
  4. Combine: Transfer roasted potatoes to a serving dish, pour garlic sauce over them, toss gently to coat.
  5. Garnish and Serve: Garnish with fresh parsley before serving.
