Pasta:
- 12 ounces rigatoni pasta
Chicken:
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
Sauce:
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish:
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the Rigatoni: Cook rigatoni according to package directions until al dente. Drain and set aside.
- Cook Chicken: In a large skillet, heat olive oil and cook chicken pieces until golden and cooked through. Remove and set aside.
- Make the Sauce: In the same skillet, melt butter and sauté garlic. Add chicken broth, bring to a simmer, then add cream, Parmesan cheese, seasonings. Stir until smooth.
- Combine: Return chicken to the skillet, simmer, then add cooked rigatoni. Toss to coat.
- Garnish and Serve: Garnish with parsley before serving.
