For the Lasagna Rolls:

  • 8 lasagna noodles (cooked al dente)

For the Filling:

  • 2 cups cooked shredded chicken
  • 1 1/2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

For Assembly and Garnish:

  • 2 cups Alfredo sauce (homemade or store-bought)
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Mix Filling: Combine chicken, ricotta, 1/2 cup mozzarella, Parmesan, egg, spices, salt, and pepper.
  3. Layer: Spread sauce in dish, lay noodles flat, spread filling, roll up noodles, and place seam-side down.
  4. Bake: Pour remaining sauce over rolls, sprinkle with mozzarella, cover with foil, bake 20 mins, then uncover and bake another 10 mins.
  5. Garnish and Serve: Garnish with parsley before serving warm.
