Ground Sausage:

Onion:

Mushrooms:
8 oz, sliced
Garlic:
2 cloves, minced
Baby Spinach:
4 cups
Chicken Broth:
5 cups, low‑sodium
Lasagna Noodles:
5 sheets, broken
Dried Oregano:
1 tsp
Dried Basil:
½ tsp
Butter:
3 tbsp
All‑Purpose Flour:
3 tbsp
Milk:
1 cup
Parmesan Cheese:
1 cup, grated
Instructions
- Brown the Sausage: In a large saucepan, brown the ground sausage over medium heat.
- Cook Veggies: Add chopped onion and sliced mushrooms, cook until softened.
- Add Aromatics: Stir in minced garlic and baby spinach until wilted.
- Add Broth & Noodles: Pour in chicken broth, add broken lasagna noodles, oregano, and basil; boil until noodles are tender.
- Make Cheese Sauce: Melt butter, whisk in flour to make a roux, add milk and Parmesan to make a creamy sauce.
- Combine: Pour cheese sauce into soup, warm through, and serve hot.
Notes
- Taste before adding salt as the broth and cheese may already be salty.
- Ground beef or turkey can be used instead of sausage.
- Omit noodles for better texture in leftovers or freezing, adding freshly cooked pasta when serving.
