  • 4 large eggs
  • 2/3 cup sour cream

Instructions

  1. Prepare crust: Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until evenly mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then remove and set aside to cool.
  2. Make filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add 1 cup sugar and vanilla extract, and continue beating until fully combined.
  3. Add eggs: Add the eggs one at a time, mixing on low speed just until blended after each addition to avoid overmixing.
  4. Incorporate creams: Stir in the sour cream and heavy cream until the mixture is smooth and well combined.
  5. Assemble the cake: Pour the cream cheese filling over the baked crust and smooth the top with a spatula.
  6. Bake: Place the springform pan on a baking sheet and bake for 55–65 minutes, or until the edges are set but the center is still slightly jiggly.
  7. Cool in oven: Turn off the oven and leave the cake inside with the door slightly open for 1 hour to cool gradually, helping prevent cracks.
  8. Final cooling: Remove the cake from the oven and allow it to cool completely at room temperature.
  9. Chill: Refrigerate the cheesecake for at least 4 hours or overnight to set fully.
