Turkey Breast:

  • 1 boneless turkey breast (23 lbs)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

For the glaze:

  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Prepare turkey: Pat the turkey breast dry and rub with olive oil, salt, pepper, thyme, and garlic powder. Place in a roasting dish.
  3. Make glaze: In a saucepan, combine cranberries, orange juice, orange zest, honey, brown sugar, cinnamon, and salt. Simmer for 10–12 minutes until cranberries burst.
  4. Glaze turkey: Brush half the glaze over the turkey breast. Roast for 45–55 minutes, basting with additional glaze halfway through.
  5. Rest and serve: Let the turkey rest for 10 minutes before slicing. Serve with remaining glaze on the side.
